Easy Macadamia Nut Cookies

Today I challenge you to bake some cookies for the afternoon. I even have another cookie recipe for you!

Sweet cookies with soft and chewy center, lightly crisp edges and delicious macadamia nut chunks. Easy to make and very fast to eat!

Ingredients:

170g flour, sifted
1/2 tsp baking soda
1/4 tsp salt
113 g soften butter
50g sugar
100g brown sugar
1 egg
1 tsp vanilla extract
100g chopped macadamia nuts

Step 1

Mix the flour, baking soda and salt and set aside. Then whip the soften butter and sugar until light and fluffy.

Step 2

Add one egg and keep mixing until incorporated. Next, add the vanilla extract and give it a quick stir.

Step 3

Add all the dry ingredients and mix again. Finally, add the chopped macadamia nuts and mix everything with a spatula. Cover the bowl with a plastic wrap and chill the cookie batter for 40 minutes.

Step 4

Preheat oven to 350 degrees F and cover a baking sheet with parchment paper.

Step 5

Scoop out 1-2 tablespoonful of batter with a cookie scoop (or small ice cream scoop), and place onto the prepared baking sheet. Leave a little room between each ball of cookie. Bake at 350F for 9-12 minutes.

Step 6

Carefully transfer the cookies onto a cooling rack and cool completely before serving.

Note:

Depends on the size of your cookies the baking time will vary, so after 9 minutes start to check the readiness of the cookies with a skewer or toothpick.
Don’t bake them to long or they will be dry.
