Method
- Mix the flour, baking soda and salt and set aside. Then whip the soften butter and sugar until light and fluffy.
- Add one egg and keep mixing until incorporated. Next, add the vanilla extract and give it a quick stir.
- Add all the dry ingredients and mix again. Finally, add the chopped macadamia nuts and mix everything with a spatula. Cover the bowl with a plastic wrap and chill the cookie batter for 40 minutes.
- Preheat oven to 350 degrees F and cover a baking sheet with parchment paper.
- Scoop out 1-2 tablespoonful of batter with a cookie scoop (or small ice cream scoop), and place onto the prepared baking sheet. Leave a little room between each ball of cookie. Bake at 350F for 9-12 minutes.
- Carefully transfer the cookies onto a cooling rack and cool completely before serving.
Notes
Depends on the size of your cookies the baking time will vary, so after 9 minutes start to check the readiness of the cookies with a skewer or toothpick.
Don’t bake them to long or they will be dry.
