Today I want to share with you some Christmas Cookies Gift Ideas – the Cookie Gift Box.
I’ll show you how to make three different types of cookies, give you an idea what else you can put in the box, and I’ll show you how simple it is to decorate your box. Let’s get started!
Chewy Anzac Cookies
_____________________________________________________________________________________
These tasty Australian cookies are perfect for the gift cookie box. They’re made with simple ingredients and have a rich flavor and chewy texture.
Ingredients:
180g old fashioned oats
150g all-purpose flour
60g shredded coconut
150g sugar
1 tsp baking soda + 2 tbsp boiling water
¼ tsp salt
113g butter
85g honey (you can replace with golden syrup, maple syrup or light corn syrup. Just know, that the flavor may be different).
zest of 1 orange
1 tsp vanilla extract
Step 1
In a large mixing bowl combine the flour, old fashioned oats, shredded coconut, sugar and orange zest, salt and give it a stir.
Step 2
In a heavy bottom saucepan combine the honey and butter. Let the butter melt over low heat. Dissolve the baking soda in the boiling water and mix it into the butter mixture. Give it a stir and add vanilla extract, then take off the heat.
Step 3
Pour the hot mixture into the dry ingredients and mix it with a spatula until a soft dough forms. Scoop out 1 tablespoon of cookie dough with a cookie scoop (or small ice cream scoop) and roll it into a ball.
Step 4
Place the cookie balls onto a baking sheet covered with parchment paper or Teflon sheet, leaving a little room in between and pressing them down slightly. Bake at 350 F degrees for 12-15 minutes or until they have a golden-brown color. To make the cookies more festive, you can decorate them with some melted dark chocolate and shredded coconut.
Let the cookies cool completely and you can store them in an airtight container.
Almond Cherry Biscotti
_____________________________________________________________________________________
These Italian cookies are very easy to make, and they make a great treat to have with a hot cup of your favorite beverage.
Ingredients:
250g all-purpose flour
100g sugar
1 tsp baking powder
¼ tsp salt
2 eggs at room temperature
60g soften butter
35 ml warm milk
100g dry cherries
50g almonds
zest of one orange
Step 1
In a mixing bowl combine the eggs and sugar. Using a hand mixer whisk them together for about 2 minutes. Add the milk, soften butter and whisk again.
Step 2
In a large mixing bowl combine the flour, baking powder, salt and give it a quick whisk.
Step 3
Add half of the dry ingredients to the eggs mixture and mix it with a spatula. Add the orange zest, dry cherries and almonds and mix again.
Add the rest of the dry ingredients and keep mixing.
Step 4
Transfer the dough onto the work surface dusted with flour and keep mixing with your hands. Divide the dough in half and form two loafs. Transfer them to a baking sheet and bake at 350 F degrees for 35-40 minutes or until slightly brown.
Step 5
Let them cool for about a minute and cut the baked loafs into slices about 1/2 inch thick. Place the slices with the cut side up back onto the baking sheet and bake for an additional 10 minutes on each side, until golden-brown.
Let the Biscotti cool completely and store in an airtight container at room temperature.
Christmas Mint cookies
_____________________________________________________________________________________
If you like mint flavor, you’ll love these green mint cookies. They are crisp on the edges with a tender and chewy center.
Ingredients:
210g all-purpose flour
200g powdered sugar
2 ½ tsp baking powder
¼ tsp salt
60g soften butter
2 eggs at room temperature
4-5 drops peppermint oil
green and blue gel food coloring
80-100g powdered sugar (for coating the cookie balls)
Step 1
In a large mixing bowl sift together the flour, powdered sugar, baking powder and salt. Give it a quick whisk and set aside.
Step 2
In a separate bowl combine the eggs, peppermint oil, two drops of green coloring, one drop of blue gel food coloring and using a hand mixer whisk for about a minute.
Step 3
Pour the beaten eggs into the dry ingredients, add soften butter and mix everything until combined well. I found that with a spoon it’s much easier to mix the dough. Cover the bowl with plastic wrap and refrigerate for 1.5-2 hours.
Step 4
When the cookie dough is chilled, scoop out 1 tablespoon of cookie dough with a cookie scoop and roll it into a ball. Coat each cookie ball with powdered sugar. Place the cookie balls onto a baking sheet covered with parchment paper or Teflon sheet, leaving a little room in between each cookie ball. Bake at 355 F degrees for 12-14 minutes or until they have a golden-brown color on the bottom.
Let the cookies cool completely and store in an airtight container at room temperature.
Hot Cocoa Mix
______________________________________________________________________________________
Hot cocoa mix can also be a part of our cookie gift box. It’s optional and can be replaced with a bag of coffee or a box of tea.
Ingredients:
120g cocoa powder
200g powdered milk
200g powdered sugar
120g coffee creamer
2 tsp cornstarch
½ tsp salt
Step 1
In a large mixing bowl combine all the ingredients and whisk very well.
Step 2
Fill the jars with the cocoa mixture. From the specified number of ingredients, I got three 16 oz jars.
Step 3
To make the hot cocoa all you need to do is to put a 1/3 of a cup of cocoa mix in a mug and stir in 1 cup of hot milk (water works ok but the hot chocolate isn’t as creamy or flavorful) then top it with miniature marshmallows, if desired.
Assembling the Box
_______________________________________________________________________________________
It’s time to assemble the box! I’m using a brown cupcake box that holds 12 standard cupcakes. To add some color and keep my glass jar safe, I add a little bit of crincled paper. I also use some tissue paper as a base for all my cookies.
I put the Anzac cookies first. Next will be the Christmas mint cookies and last are the Almond Cherry Biscotti. On my crinkled paper I put two candy canes, add my jar with cocoa mix and a bag with mini marshmallows which go well with the hot cocoa drink.
Now we need to close the box, tie it with a ribbon or twine, add some holiday related ornament and we are done!
The beautiful and delightful cookie gift box is ready! The best gift is a handmade gift with love! Make the cookie gift box this holiday season for your family and friends.
