In a large mixing bowl combine the flour, old fashioned oats, shredded coconut, sugar and orange zest, salt and give it a stir.
In a heavy bottom saucepan combine the honey and butter. Let the butter melt over low heat. Dissolve the baking soda in the boiling water and mix it into the butter mixture. Give it a stir and add vanilla extract, then take off the heat.
Pour the hot mixture into the dry ingredients and mix it with a spatula until a soft dough forms. Scoop out 1 tablespoon of cookie dough with a cookie scoop (or small ice cream scoop) and roll it into a ball.
Place the cookie balls onto a baking sheet covered with parchment paper or Teflon sheet, leaving a little room in between and pressing them down slightly. Bake at 350 F degrees for 12-15 minutes or until they have a golden-brown color.
