Chewy Anzac Cookies

These cookies are made with simple ingredients and have a rich flavor and chewy texture.

Ingredients
  

  • 180 g old fashioned oats
  • 150 g all-purpose flour
  • 60 g shredded coconut
  • 150 g sugar
  • 1 tsp baking soda
  • 2 tbsp boiling water
  • 1/4 tsp salt
  • 113 g butter
  • 85 g honey (you can replace with golden syrup, maple syrup or light corn syrup. Just know, that the flavor may be different)
  • zest of 1 orange
  • 1 tsp vanilla extract

Instructions
 

  • In a large mixing bowl combine the flour, old fashioned oats, shredded coconut, sugar and orange zest, salt and give it a stir.
  • In a heavy bottom saucepan combine the honey and butter. Let the butter melt over low heat. Dissolve the baking soda in the boiling water and mix it into the butter mixture. Give it a stir and add vanilla extract, then take off the heat.
  • Pour the hot mixture into the dry ingredients and mix it with a spatula until a soft dough forms. Scoop out 1 tablespoon of cookie dough with a cookie scoop (or small ice cream scoop) and roll it into a ball.
  • Place the cookie balls onto a baking sheet covered with parchment paper or Teflon sheet, leaving a little room in between and pressing them down slightly. Bake at 350 F degrees for 12-15 minutes or until they have a golden-brown color.

Notes

To make the cookies more festive, you can decorate them with some melted dark chocolate and shredded coconut.
Let the cookies cool completely and you can store them in an airtight container.
