Method
- Mix together sugar and butter at room temperature until light and fluffy.
- Keep mixer running add 1 tsp vanilla extract and vegetable oil. Let all the ingredients combine together.
- Separate egg whites from egg yolks and add the yolks to the butter mixture.
- Add room temperature buttermilk and mix everything for a minute or so.
- Mix together vinegar with red food coloring and add it to the butter.
- Sift all the dry ingredients together and add them to the cupcake’s dough.
- Whisk the egg whites until bubbles appear and add them to the dough.
- Fill out the cupcake’s cups to 2/3 of the way full and bake at 350 degrees for 20-22 minutes.
- Let the cupcakes cool completely and decorate with your favorite frosting or you can make delicious cream cheese frosting.
Notes
You can use a stand mixer and let it do all the work or you can use a hand mixer.
Use all ingredients at room temperature.
Sometimes during the beating stop the mixer and clean the sides of the bowl with a spatula.
Heat the oven in advance.
After 20 minutes of baking check the cupcakes with wooden stick for readiness.
