Red Velvet Cupcakes

Sweet and fluffy cupcakes that will win everybody’s heart!

Ingredients
  

  • 200 g sugar
  • 70 g butter at room temperature
  • 1 tsp vanilla extract
  • 120 ml vegetable oil
  • 2 eggs at room temperature
  • 120 ml buttermilk at room temperature
  • 160 g flour
  • 30 g corn starch
  • 1/2 tsp baking soda
  • 2 tsp cacao powder
  • 1/2 tsp salt
  • 1 1/2-2 tsp red food color
  • 1 tsp white vinegar

Instructions
 

  • Mix together sugar and butter at room temperature until light and fluffy.
  • Keep mixer running add 1 tsp vanilla extract and vegetable oil.  Let all the ingredients combine together.
  • Separate egg whites from egg yolks and add the yolks to the butter mixture.
  • Add room temperature buttermilk and mix everything for a minute or so.
  • Mix together vinegar with red food coloring and add it to the butter.
  • Sift all the dry ingredients together and add them to the cupcake’s dough.
  • Whisk the egg whites until bubbles appear and add them to the dough.
  • Fill out the cupcake’s cups to 2/3 of the way full and bake at 350 degrees for 20-22 minutes.
  • Let the cupcakes cool completely and decorate with your favorite frosting or you can make delicious cream cheese frosting.

Notes

You can use a stand mixer and let it do all the work or you can use a hand mixer.
Use all ingredients at room temperature.
Sometimes during the beating stop the mixer and clean the sides of the bowl with a spatula.
Heat the oven in advance.
After 20 minutes of baking check the cupcakes with wooden stick for readiness.
