Red Velvet Cupcakes

Sweet and fluffy cupcakes that will win everybody’s heart!

Ingredients
  

  • 200 g sugar
  • 70 g butter at room temperature
  • 1 tsp vanilla extract
  • 120 ml vegetable oil
  • 2 eggs at room temperature
  • 120 ml buttermilk at room temperature
  • 160 g flour
  • 30 g corn starch
  • 1/2 tsp baking soda
  • 2 tsp cacao powder
  • 1/2 tsp salt
  • 1 1/2-2 tsp red food color
  • 1 tsp white vinegar

Method
 

  1. Mix together sugar and butter at room temperature until light and fluffy.
  2. Keep mixer running add 1 tsp vanilla extract and vegetable oil.  Let all the ingredients combine together.
  3. Separate egg whites from egg yolks and add the yolks to the butter mixture.
  4. Add room temperature buttermilk and mix everything for a minute or so.
  5. Mix together vinegar with red food coloring and add it to the butter.
  6. Sift all the dry ingredients together and add them to the cupcake’s dough.
  7. Whisk the egg whites until bubbles appear and add them to the dough.
  8. Fill out the cupcake’s cups to 2/3 of the way full and bake at 350 degrees for 20-22 minutes.
  9. Let the cupcakes cool completely and decorate with your favorite frosting or you can make delicious cream cheese frosting.

Notes

You can use a stand mixer and let it do all the work or you can use a hand mixer.
Use all ingredients at room temperature.
Sometimes during the beating stop the mixer and clean the sides of the bowl with a spatula.
Heat the oven in advance.
After 20 minutes of baking check the cupcakes with wooden stick for readiness.
