No Sugar Blueberries Cake

This no sugar and no white flour cake has a very soft structure and delicate taste. It makes a great addition to morning coffee or afternoon snack.

Ingredients
  

  • 115 g old fashion rolled oats
  • 180 g whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 230 g Greek yogurt
  • 65 ml milk
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 140 ml honey/raw blue agave
  • 60 ml coconut oil
  • 225 g blueberries

Method
 

  1. In two separate bowls mix together dry ingredients and wet ingredients.
  2. Then add wet mixture to the dry ingredients and mix everything together.
  3. Add blueberries and very gently mix again.
  4. Transfer the dough to the baking dish covered with parchment paper and bake at 350 degrees for 40-45 minutes.

Notes

All wet ingredients need to be at room temperature.
