Carrot Coffee Cake Recipe

- 2 eggs
- 70 g sugar
- 90 g melted butter
- 2 grated carrots
- 1 tbsp orange zest
- 40 g walnuts
- 130 g flour
- 1 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
For the glaze:
- 50 g sugar powder
- 1-1 1/2 tbsp orange juice
Mix together eggs, sugar and melted butter.
Add carrots, orange zest, walnuts and mix again.
Add all the dry ingredients and mix all together.
Transfer the dough to a baking dish and bake at 350 degrees for 35-40 minutes.
For the glaze, mix together sugar powder and orange juice.
Cool the cake completely and cover with the glaze.
