In a large mixing bowl combine the ripe bananas and softened butter. Using a fork, mash everything together.
Next, add the eggs and the sugar and mix again.
After that, add the flour, baking powder, salt and, if you like the taste of cinnamon, add the cinnamon and ground nutmeg. Mix all the ingredients until well combined and the dough has a smooth and thick texture.
Cover the bowl with plastic wrap and refrigerate for 30 minutes.
When the cookie dough has chilled, use a cookie scoop or a spoon to form the cookies on a baking pan covered with parchment paper, leaving at least 2 inches between cookies. Bake the banana cookies at 350 degrees Fahrenheit for 15-20 minutes or until the bottom is golden brown. Let them cool completely.
In the meantime, to make the cookies look more festive, let’s make some simple sugar glaze. For the glaze we’ll need powdered sugar and lemon juice. Add the lemon juice to the powdered sugar and whisk until you get a thick runny consistency. Add some water, if needed. Transfer the sugar glaze to a piping bag or a Ziplock bag and tie the end.
Decorate the Banana Cookies with the sugar glaze and, if you wish, with some colorful sugar sprinkles.
