Almond Cake with Berries
This easy to make cake is light and fluffy, with rich nutty flavor, lots of juicy berries and topped with crunchy almonds that will only take you 10 minutes to prepare.
- 150 g softened butter
- 100 g sugar
- 4 eggs
- 1 tsp vanilla extract
- 180 g almond flour
- 80 g all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 200 g berries
- almonds for topping
In a large mixing bowl combine the softened butter and sugar. Using a hand mixer, whisk the mixture until light and fluffy.
Next, add the eggs, vanilla extract and keep whisking until you get a smooth consistency.
Next, add the almond flour, all-purpose flour, baking powder and salt. Using a hand mixer, whisk all the ingredients together. Scrub the sides of the bowl using a spatula.
Transfer the cake batter into a springform pan covered with parchment paper. Spread it evenly and decorate the top with the berries of your choice and sliced almonds. You can also sprinkle a little bit of sugar on top for a slightly shiny caramelized look.
Bake the cake at 350°F degrees (180°C) for 50-60 minutes. Check the readiness of the cake with a wooden skewer or toothpick. The skewer inserted into the cake should come out dry. Let it cool completely before serving.
- Before making the cake batter, make sure that all the ingredients are at room temperature.
- Store the leftover cake in an airtight container at room temperature for up to 3 days.
- You can also keep it refrigerated, just bring it to room temperature before serving.
