Today I’m making the best Almond Cake with Berries Recipe. This easy to make cake is light and fluffy, with rich nutty flavor, lots of juicy berries and topped with crunchy almonds that will only take you 10 minutes to prepare.
Ingredients:
150 g – softened butter
100 g – sugar
4 – eggs
1 tsp – vanilla extract
180 g – almond flour
80 g – all-purpose flour
1 tsp -baking powder
¼ tsp – salt
200 g – berries
Almond slices for topping

Step 1
In a large mixing bowl combine the softened butter and sugar. Using a hand mixer, whisk the mixture until light and fluffy.
Step 2
Next, add the eggs, vanilla extract and keep whisking until you get a smooth consistency.
Step 3
Next, add the almond flour, all-purpose flour, baking powder and salt. Using a hand mixer, whisk all the ingredients together. Scrub the sides of the bowl using a spatula.
Step 4
Transfer the cake batter into a springform pan covered with parchment paper. Spread it evenly and decorate the top with the berries of your choice and sliced almonds. You can also sprinkle a little bit of sugar on top for a slightly shiny caramelized look.
Step 5
Bake the cake at 350°F degrees (180°C) for 50-60 minutes. Check the readiness of the cake with a wooden skewer or toothpick. The skewer inserted into the cake should come out dry. Let it cool completely before serving.
The cake turned out very beautiful! It has soft crumb, juicy berries and crunchy almond topping!
