No Sugar Blueberries Cake

This no sugar and no white flour cake has a very soft structure and delicate taste. It makes a great addition to morning coffee or afternoon snack.

Ingredients:

115 g (1 1/4 cup)-old fashion rolled oats
180 g (1 1/4 cup)- whole wheat flour
1 1/2 tsp – baking powder
1/2 tsp – baking soda
1/4 tsp – salt
230 g (1 cup) – Greek yogurt
65 ml (1/4 cup) – milk
2 eggs
1 1/2 tsp vanilla extract
140 ml (1/2 cup) – honey/raw blue agave
60 ml (1/3 cup) – coconut oil
225 g (8 oz) – blueberries

Step 1

In two separate bowls mix together dry ingredients and wet ingredients.

Step 2

Then add wet mixture to the dry ingredients and mix everything together.

Step 3

Add blueberries and very gently mix again.

Step 4

Transfer the dough to the baking dish covered with parchment paper and bake at 350 degrees for 40-45 minutes.

Note:

All wet ingredients need to be at room temperature.
