Today I want to show you how to make a No Bake Strawberry Dessert. I call it “lazy” Tiramisu because this easy dessert can be done very quickly. I’ll also show you how to make a Strawberry Mimosa and when combine them together, they make a perfect brunch dessert or a romantic dessert for two for any occasion.
Ingredients:
150 ml cold heavy whipping cream
100g cold Mascarpone cheese
1 tbsp lemon juice (for the frosting)
40g powdered sugar
500g fresh strawberries
50g sugar
2 tbsp lemon juice (for the strawberry puree)
8-10 Ladyfingers cookies
1 bottle cold Prosecco wine
Step 1
In a heavy bottom saucepan combine the strawberries, sugar and lemon juice. Using a hand blender smash the strawberries until they reach a smooth consistency.
*Instead of strawberries you can use any other fruits or berries you like.
Step 2
Place the pan over medium heat, bring it to a boil and cook for about 2 minutes stirring occasionally. Remove the pan from the heat and pour the strawberry puree into a glass to cool down. I’ve divided it into two glasses. One of them I’ll use for the dessert and the second one for the Mimosa drink.
Step 3
In a large mixing bowl combine the cold heavy whipping cream and powdered sugar. Using a hand blender with a whisk attachment or a hand mixer whip the cream very carefully until soft peaks form.
Add the cold Mascarpone cheese, lemon juice and whisk again. The mixture will thicken very quickly, so don’t over beat it. Transfer the frosting into a piping bag.
Step 4
For assembling the dessert, pipe a little bit of the frosting on the bottom of the glass. Next, dip the cookies into the strawberry puree and place on top. You can also add a couple of teaspoons of puree on top of the cookies.
Next, pipe the frosting and add another layer of cookies. Make as many layers, as you would like to create two strawberry desserts. Cover each glass with plastic wrap and refrigerate for a few hours.
Before serving the dessert, decorate with chopped strawberries and mint leaves.
Step 5
To make the strawberry Mimosa, pour the strawberry puree up to 1/3 of the glass. Then, slowly pour your favorite Prosecco wine. Decorate each glass with a whole strawberry and enjoy the drink!
