How to Make Edible Moss Without Eggs

Today I’m going to show you How to Make Edible Moss without eggs or honey. I already have a post about How to Make Edible Moss on my blog. The original recipe contains egg and honey and I’ve received a few questions about how to replace them. So, today I will be answering these questions.

Ingredients:

65g unsweetened applesauce
25g sugar
30 ml buttermilk
30g all-purpose flour
1 ¼ tsp baking powder
¼ tsp baking soda
1 tsp white vinegar
Gel food coloring

Step 1

In a mixing bowl combine the applesauce, buttermilk, sugar and whisk to combine the ingredients.

Step 2

Add the baking soda to the vinegar, let the mixture foam and release the gases, then add it to the applesauce mixture and whisk again. It will help our moss batter expand while baking.

Step 3

Add one drop of green gel coloring.  Next sift in the flour and baking powder. Give it a final whisk and our moss batter is ready.

*You can use any other colors or combinations of colors to make the moss.

Step 4

Fill the disposable paper cups about 1/3 of the way up. You need to leave enough room for the batter to climb up.  Next, we need to microwave the cups for about 50-60 seconds. Check the readiness with a skewer. Turn the cups upside down, set them on the cooling rack and let them cool completely.

*From the specified amount of ingredients, I filled out two cups with the dough.

Step 5

When they cool down, cut each cup with scissors and take out the sponge cake moss. I also want to let you know that it’s best to use disposable paper cups not plastic ones. When I was experimenting with this recipe, I found out that the paper cups work better.

This recipe without eggs and honey gives a very similar result to the original one. It looks the same and has the same air texture. The difference I found is that this recipe makes a heavier, moist and a little bit stickier moss. So, if you are avoiding eggs or honey in your diet, I think this recipe makes an excellent replacement.

Notes:

All the ingredients need to be at room temperature
You can also change the tone and color of the original green color by adding a drop of any other colors.
For a better result use the disposable paper cups.
You can make it in advance and store it in an airtight container in the freezer for a few months. To use it, let it thaw out on the counter.
