Fresh Peach Cake Recipe

Today I’m going to show you how to make an easy cake with fresh peaches. It’s a very light and tender cake made without any butter or oil, and it’s one of these recipes that are good to have on hand for a quick baked treat for your friends and family.

Ingredients:

220g sifted flour
2 tsp (8g) baking powder
2 eggs at room temperature
110g sugar
170g yogurt (I use vanilla flavored yogurt)
¼ tsp salt
4 large peaches

Step 1

Start by peeling and cutting three peaches into cubes. You don’t need to peel the fourth peach. Just cut it in half and slice thin. We’ll use it for decorating the top of the cake.

Step 2

In a large bowl, using a hand mixer combine the eggs and sugar together until light and fluffy. Add the yogurt and mix again.

Add the flour, baking powder and salt and give it a final whisk with a mixer. Add the peach cubes and carefully mix with a spatula.

Step 3

Transfer the cake batter into a baking pan, smooth it with a spatula and decorate the top with thin slices of peach. I use silicone form 7” wide on the bottom and 8” wide on the top. But you can use regular baking pan covered with parchment paper. Bake the cake at 340 F degrease for about 60 minutes or until the toothpick comes out dry. Cool the cake completely and decorate with powdered sugar.

This tender and delicious cake is ready!

Notes:

You can substitute with other fruit like nectarines, plums or cherries (just avoid overly juicy berries like strawberries or raspberries).
