Carrot Coffee Cake Recipe

Moist, soft and delicate cake that just melted in your mouth!

Ingredients:

2 eggs
70g sugar
90g melted butter
2 grated carrots
1 tbsp orange zest
40g walnuts
130g flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt

For the glaze:

50 g sugar powder
1-1 1/2 tbsp orange juice

Step 1

Mix together eggs, sugar and melted butter.

Step 2

Add carrots, orange zest, walnuts and mix again.

Step 3

Add all the dry ingredients and mix all together.

Step 4

Transfer the dough to a baking dish and bake at 350 degrees for 35-40 minutes.

Step 5

For the glaze, mix together sugar powder and orange juice.

Step 6

Cool the cake completely and cover with the glaze.

Instructions
 

  • Mix together eggs, sugar and melted butter.
  • Add carrots, orange zest, walnuts and mix again.
  • Add all the dry ingredients and mix all together.
  • Transfer the dough to a baking dish and bake at 350 degrees for 35-40 minutes.
  • For the glaze, mix together sugar powder and orange juice.
  • Cool the cake completely and cover with the glaze.
