Red Velvet Cupcakes

Sweet and fluffy cupcakes that will win everybody’s heart!

Ingredients:

200 g sugar
70 g butter at room temperature
1 tsp vanilla extract
120 ml vegetable oil
2 eggs at room temperature
120 ml buttermilk at room temperature
160g flour
30g corn starch
1/2 tsp baking soda
2 tsp cacao powder
1/2 tsp salt
1.5-2 tsp red food color
1 tsp white vinegar

Step 1

Mix together sugar and butter at room temperature until light and fluffy.

Step 2

Keep mixer running add 1 tsp vanilla extract and vegetable oil.  Let all the ingredients combine together.

Step 3

Separate egg whites from egg yolks and add the yolks to the butter mixture.

Step 4

Add room temperature buttermilk and mix everything for a minute or so.

Step 5

Mix together vinegar with red food coloring and add it to the butter.

Step 6

Sift all the dry ingredients together and add them to the cupcake’s dough.

Step 7

Whisk the egg whites until bubbles appear and add them to the dough.

Step 8

Fill out the cupcake’s cups to 2/3 of the way full and bake at 350 degrees for 20-22 minutes.

Step 9

Let the cupcakes cool completely and decorate with your favorite frosting or you can make delicious cream cheese frosting.

Notes:

You can use a stand mixer and let it do all the work or you can use a hand mixer.
Use all ingredients at room temperature.
Sometimes during the beating stop the mixer and clean the sides of the bowl with a spatula.
Heat the oven in advance.
After 20 minutes of baking check the cupcakes with wooden stick for readiness.
