300gground meat (I use mix of ground beef and turkey)
250gdiced potatoes (about 2 medium potatoes)
130gchopped onion (about ½ of a big onion)
50gchopped cold butter
3/4tspsalt
1/8tspblack pepper
1/2tspgarlic powder
1eggfor brush wash
Instructions
In a big bowl mix the buttermilk, baking soda and salt. Give it a stir and add the egg, melted butter and stir again.Add the flour in two butches and knead the dough. If the dough sticks to your hands, you can add a little bit more flour, but not too much. When the dough stops sticking to your hands, form it into a ball and transfer into a bowl. Cover the bowl with plastic wrap and let it rest for 30 minutes.
In the meanwhile, let’s prepare the filling. In a big bowl mix the ground meat, onions, potatoes and seasoning until well combined.
Meanwhile, our dough is ready to go. Divide the dough into two uneven pieces and roll each piece into a rectangle. Transfer the bigger piece of dough to the baking sheet, covered with parchment paper. Spread the filling over the entire surface of the dough and put the pieces of cold butter on top of the meat filling. Cover the meat with the second piece of the dough and seal the edges. In a small bowl beat one egg and brush the top of the pie for a shiny, golden brown look. With a sharp knife make cuts on top of the pie and bake it at 350F degrees for 50-55 minutes or until golden brown.
Notes
I use a mix of ground beef and ground turkey, but you can use any meat you like. You can use whatever seasoning you like.
