Christmas Mint cookies

If you like mint flavor, you’ll love these green mint cookies. They are crisp on the edges with a tender and chewy center.

Ingredients
  

  • 210 g all-purpose flour
  • 200 g powdered sugar
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 60 g soften butter
  • 2 eggs at room temperature
  • 4-5 drops peppermint oil
  • 2 drops green gel food coloring
  • 1 drop blue gel food coloring
  • 80-100 g powdered sugar (for coating the cookie balls)

Instructions
 

  • In a large mixing bowl sift together the flour, powdered sugar, baking powder and salt. Give it a quick whisk and set aside.
  • In a separate bowl combine the eggs, peppermint oil, two drops of green coloring, one drop of blue gel food coloring and using a hand mixer whisk for about a minute.
  • Pour the beaten eggs into the dry ingredients, add soften butter and mix everything until combined well. I found that with a spoon it’s much easier to mix the dough. Cover the bowl with plastic wrap and refrigerate for 1.5-2 hours.
  • When the cookie dough is chilled, scoop out 1 tablespoon of cookie dough with a cookie scoop and roll it into a ball. Coat each cookie ball with powdered sugar. Place the cookie balls onto a baking sheet covered with parchment paper or Teflon sheet, leaving a little room in between each cookie ball. Bake at 355 F degrees for 12-14 minutes or until they have a golden-brown color on the bottom.
