In a large mixing bowl sift together the flour, powdered sugar, baking powder and salt. Give it a quick whisk and set aside.
In a separate bowl combine the eggs, peppermint oil, two drops of green coloring, one drop of blue gel food coloring and using a hand mixer whisk for about a minute.
Pour the beaten eggs into the dry ingredients, add soften butter and mix everything until combined well. I found that with a spoon it’s much easier to mix the dough. Cover the bowl with plastic wrap and refrigerate for 1.5-2 hours.
When the cookie dough is chilled, scoop out 1 tablespoon of cookie dough with a cookie scoop and roll it into a ball. Coat each cookie ball with powdered sugar. Place the cookie balls onto a baking sheet covered with parchment paper or Teflon sheet, leaving a little room in between each cookie ball. Bake at 355 F degrees for 12-14 minutes or until they have a golden-brown color on the bottom.
