No Bake Strawberry Dessert

This elegant No Bake Strawberry Dessert with a refreshing Strawberry Mimosa are perfect for a romantic getaway for any time of the day.

Ingredients
  

  • 150 ml cold heavy whipping cream
  • 100 g cold Mascarpone cheese
  • 1 tbsp lemon juice (for the frosting)
  • 40 g powdered sugar
  • 500 g fresh strawberries
  • 50 g sugar
  • 2 tbsp lemon juice (for the strawberry puree)
  • 8-10 Ladyfingers cookies
  • 1 bottle cold Prosecco wine

Instructions
 

  • In a heavy bottom saucepan combine the strawberries, sugar and lemon juice. Using a hand blender smash the strawberries until they reach a smooth consistency.
  • Place the pan over medium heat, bring it to a boil and cook for about 2 minutes stirring occasionally. Remove the pan from the heat and pour the strawberry puree into a glass to cool down. I’ve divided it into two glasses. One of them I’ll use for the dessert and the second one for the Mimosa drink.
  • In a large mixing bowl combine the cold heavy whipping cream and powdered sugar. Using a hand blender with a whisk attachment or a hand mixer whip the cream very carefully until soft peaks form.
    Add the cold Mascarpone cheese, lemon juice and whisk again. The mixture will thicken very quickly, so don’t over beat it. Transfer the frosting into a piping bag.
  • For assembling the dessert, pipe a little bit of the frosting on the bottom of the glass. Next, dip the cookies into the strawberry puree and place on top. You can also add a couple of teaspoons of puree on top of the cookies. Next, pipe the frosting and add another layer of cookies. Make as many layers, as you would like to create two strawberry desserts.
    Cover each glass with plastic wrap and refrigerate for a few hours. Before serving the dessert, decorate with chopped strawberries and mint leaves.
  • To make the strawberry Mimosa, pour the strawberry puree up to 1/3 of the glass. Then, slowly pour your favorite Prosecco wine. Decorate each glass with a whole strawberry and enjoy the drink!

Notes

For this recipe use cold heavy whipping cream and Mascarpone cheese.
Instead of strawberries you can use any other fruits or berries you like.
From the specified amount of the ingredients you can assemble two glass desserts about 250 g each.
