Fresh Peach Cake Recipe

It’s a very light and tender cake made without any butter or oil, and it’s one of these recipes that are good to have on hand for a quick baked treat for your friends and family.

Ingredients
  

  • 220 g sifted flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs at room temperature
  • 110 g sugar
  • 170 g yogurt (I use vanilla flavored yogurt)
  • 4 large peaches

Instructions
 

  • Start by peeling and cutting three peaches into cubes. You don’t need to peel the fourth peach. Just cut it in half and slice thin. We’ll use it for decorating the top of the cake.
  • In a large bowl, using a hand mixer combine the eggs and sugar together until light and fluffy. Add the yogurt and mix again. Add the flour and baking powder and give it a final whisk with a mixer. Add the peach cubes and carefully mix with a spatula.
  • Transfer the cake batter into a baking pan, smooth it with a spatula and decorate the top with thin slices of peach. I use silicone form 7” wide on the bottom and 8” wide on the top. But you can use regular baking pan covered with parchment paper.
    Bake the cake at 340 F degrease for about 60 minutes or until the toothpick comes out dry. Cool the cake completely and decorate with powdered sugar.

Notes

You can substitute with other fruit like nectarines, plums or cherries (just avoid overly juicy berries like strawberries or raspberries).
