Pear Cake Recipe

Today I’m making an Amazing Pear Cake Recipe that melts in your mouth. This Pear Cake is made with 3 juicy pears, light vanilla batter with a hint of cinnamon and a little crunch of almonds. This cake is simple to prepare and it’s perfect for an afternoon coffee break.

Ingredients for the filling:

400g – pears3 eggs at room temperature
50g – sugar
20g – butter
1 tsp – cinnamon (optional)

Ingredients for the cake batter:

200g – all-purpose flour
12g – baking powder
¼ tsp – salt
3 – eggs
100g – sugar
100 ml – milk
100 ml – vegetable oil
1 tsp – vanilla extract

Step 1

We’ll start by preparing the pear filling. Slice the pears into long pieces. I like to slice large pieces around the center and then slice each piece into long stripes. Next, we need to preheat a medium size pan and put a piece of butter in it. When the butter has melted, add the pear pieces to the pen, add sugar and the ground cinnamon. Mix all the ingredients together and cook over medium heat for about 5 minutes stirring occasionally until the pears are softened but not mushed. Then remove the pen from the heat and set aside.

Step 2

In a stand mixer bowl combine the eggs, sugar, salt and vanilla extract. Beat them together for about 5 minutes. The egg mixture should significantly increase in volume and turn into a light-yellow color. You can use a hand mixer instead of a stand mixer for this step, but you’ll need to mix longer to get the right consistency.

Step 3

Reduce the speed of your mixer and slowly add the milk. Then slowly add the vegetable oil and mix for another 20 seconds. Next, sift in the flour and the baking powder.Using a whisk attachment, mix the cake batter for 10-15 seconds on low speed. Then using a spatula, mix it again to make sure no dry flour is left.

Step 4

Transfer the cake batter into a 9-inch baking dish covered with parchment paper and place the cooked pears on top. Sprinkle with almonds and bake at 350°F degrees (180°C) for 40-45 minutes. Check the readiness of the cake with a wooden skewer or toothpick. The skewer inserted into the cake should come out dry.

Step 5

Cover the cake with the plate and turn it upside down. Remove the baking dish and the parchment paper. Cover the cake with a plate again and turn it upside down one more time.

Tips for making the Pear Cake Recipe:

  • Before making the cake batter make sure that all the ingredients are at room temperature. 
  • Line your 9-inch baking dish with parchment parchment paper and preheat your oven to 350°F degrees (180°C).
  • You can use a hand mixer instead of a stand mixer for this recipe, but you’ll need to mix longer to get the right consistency.
